With Shrove Tuesday fast approaching it’s time to start thinking about pancake toppings. Stick with the classics or try something new. These healthy vegan pancake toppings are flipping great, so if you’re looking for inspiration you’ve come to the right place. We’ve also included a bonus recipe of pea ‘nicecream’ which can be used as an alternative to icecream or squirty cream!
Berry Compote & Chia Seed Pudding
Mix 1 tbsp of chia seeds with 1 cup of your chosen plant milk in a jar and leave overnight to set. For the compote, simply simmer fruit, frozen or fresh, on a medium heat until jammy and then serve immediately.
Vegan Cream & Berries
Whip up soya cream in a mixer until stiff peaks form, or handwisk to your liking, then throw your favourite berries on top. Indulgent and delicious. Alternatively you can buy vegan squirty cream and use frozen fruit for a more convenient option.
Banana & Peanut Butter
Whether you like your peanut butter smooth or crunchy, you’ll love this classic combination. Slice the banana, and let the peanut butter melt over the warm pancakes.
Lemon & Sugar
Self explanatory! If you want to go for a somewhat healthier alternative to caster sugar, try coconut sugar. Coconut sugar retains some of the natural vitamins, minerals, fibre, antioxidants and also has a lower glycemic index.
Warm, festive and delicious. Mix ½ a cup of sugar with 1tbs of ground cinnamon and sprinkle over the pancakes to your heart’s desire.
Pomegranate & Whipped Coconut Cream
The tanginess of the coconut and tartness of the pomegranate make this the perfect combination. Simply whip up some coconut creme for a decant desert, or go for a lighter option of coconut yoghurt for breakfast and sprinkle with fresh pomegranate.
Yoghurt, Granola & Blueberries
Your favourite cereal on a pancake? Why not! Buy any honey-free granola or make your own, and serve with high-protein soya yoghurt and fresh fruit. Drizzle with agave syrup or maple syrup for added sweetness.
Pea & Flaxseed Nice-cream
Pop this on some pancakes and happy days! I used to make this every morning and play around with toppings. A healthy vegan alternative to vanilla ice cream and squirty cream, this ‘nicecream’ is packed with nutrients.
Ingredients to whack in the blender:
– 2 frozen ripe bananas
– 1tbs flax seed
– 2 handfuls of frozen spinach and or kale
– 250ml cup plant milk
– 1sp spirulina powder
– Half an avocado
– 1 date, optional
If You Have Any Left Over You Can Make Them Into Pancakes Too!
Just add enough plain flour to make a batter-like consistency along with 1tsp baking powder and fry up. Sprinkle with icing sugar for sweetness.
THE Best Vegan Banana Pancake Recipe
– 1 cup oats
– 1 ripe banana
– ½ cup plant milk
– 2tbs maple syrup
– 1tsp vanilla extract
– 1tsp baking powder
– ¼ tsp salt
Blend all ingredients and fry as any other pancake.
