06 Aug Banana Split Recipe


Possibly breakfast, possibly dessert. This take on the classic banana split uses coconut yoghurt in place of the traditional ice cream meaning this tasty treat is also a great breakfast option.


Prep Time: 5 minutes 

Cooking Time: 5 minutes

Equipment: Chopping board, Knife, frying pan, measuring spoons.





Ingredients - Makes 1 Serving

1 Banana, peeled and cut in half lengthways

½ tbsp Maple Syrup

¼ tbsp Coconut Oil

100g Coconut Yoghurt

Handful Fresh Berries

Granola 

1 tsp Peanut Butter


Method

Heat the coconut oil and maple syrup in a frying pan, over a high heat. Once hot, add the banana halves and caramelise each side for 1 – 2 minutes.

Arrange the banana on a plate, top with coconut yoghurt, fresh berries, crunchy granola and a drizzle of peanut butter.


Notes

Try adding a sprinkle of chocolate chips or toasted seeds.
