
Possibly breakfast, possibly dessert. This take on the classic banana split uses coconut yoghurt in place of the traditional ice cream meaning this tasty treat is also a great breakfast option.

Ingredients
1 Banana, peeled and cut in half lengthways
½ tbsp Maple Syrup
¼ tbsp Coconut Oil
100g Coconut Yoghurt
Handful Fresh Berries
Granola
1 tsp Peanut Butter
Method
Step 1
Heat the coconut oil and maple syrup in a frying pan, over high heat. Once hot, add the banana halves and caramelise each side for 1 – 2 minutes.
Step 2
Arrange the banana on a plate, top with coconut yoghurt, fresh berries, crunchy granola and a drizzle of peanut butter.
