
These vegan cupcakes are the perfect combination of a juicy and delicate blueberry cupcake with a sweet and slightly lemony frosting. They are really easy to make and an ideal recipe for beginners. You could also add some cocoa or other berries, depending on your personal preference.

Ingredients
Muffin: 250g flour
120g sugar
200ml oat milk
170g margarine
2 tsp dry yeast
1 pack baking powder
120g blueberries
1 pinch lemon zest
1 pinch tonka bean
1 pinch nutmeg
1 pinch salt
Optional: 40g of chocolate drops
Frosting: 150g butter (room temperature)
200g icing sugar
1 tbsp lemon juice
1/4- 1/2 tsp vanilla extract
1 pinch salt
1 pinch lemon zest

Method
For the cupcake:
1. Heat the milk. The perfect temperature is 37°C, but it doesn’t have to be spot-on – as long as the milk is lukewarm at least.
2. Add 1 tsp of sugar and the yeast to the milk. Stir well and let it sit for ~ 5 minutes.
3. Melt the margarine in the microwave or in a pot.
4. Add all dry ingredients to your food processor and mix them. Add the milk mix and the margarine and mix everything until it’s well combined.
5. Add the batter to muffin tins and add 3-4 blueberries to every muffin.
6. Bake them at 200°C for 15-20 minutes.
7. Let them cool down.
For the frosting:
1. Add the butter to your food processor and whip it.
2. Sieve the icing sugar and add it to the butter.
3. Add the other ingredients and whip it for a few minutes.
4. Put the mix into a piping bag and add the frosting to the muffins.
